I planted an annual variety pack of sunflowers this year. 

I wonder if I plant the seeds will they grow back next year?

I know annual means NO, but why wouldn't planting the seeds produce flowers next year?

Annual means that the plant itself will not come back. The seeds will grow. The only problem is that if the plant was a hybrid you may not get the same plant and flower as the original.

Gotcha... like apple seeds.

I'm going to just take the heads and plant them seeds up. 

You'll have to do a lot of thinning out if you plant that many in one place. Also everything from deer to squirrels eat sunflower seeds. Chipmunks or something dig mine right out of the soil. They get my peas and squash too.

Hmmm someting to think about.
